It is usually produced from Tuscan varieties (Frantoio and Leccino) picked before full ripeness. It is this ‘less ripe’ fruit that creates this more ‘robust’ and ‘pungent’ character. (Pungency is a highly regarded trait in Extra Virgin Olive Oil, associated with high polyphenols & stronger flavour).
