Petra Reserve Extra Virgin Olive Oil is produced only from fruit grown, pressed and bottled on the Estate. Single estate oils have a "sense of place" that is valued by discerning users. Characteristics of aroma and flavour are always unique to a particular environment and micro climate. They are further influenced by olive variety and time of harvest. Knowledgable consumers quickly become aware of the style they prefer so we carefully blend our oils each season to maintain our standards of balance and consistency.

Early Harvest has a sharp, slightly bitter character with a green fruity taste. It is usually produced from Tuscan varieties (Frantoio & Leccino) picked before full ripeness.
Late Harvest is mellow & slightly sweet with a ripe fruit taste, generally obtained from Spanish (Nevadillo Blanco & WA Mission) & Greek (Koroneiki) varieties picked closer to the time of full ripeness.
Freshness is vital to premium olive oil. Over time it becomes flat, uninspiring and eventually rancid. Petra Special Reserve is always vibrant, fresh and a worthy accompaniment to fine food.
